Episode 6: The Undiscovered Burrito

Ingredients

1 red onion, chopped
3 cloves garlic, minced
1 pound ground beef or turkey
2 tbsp cumin
2 tsp cayenne
1-2 tbsp of chili powder works good here, too
1 can of refried beans
2 or 3 pickled jalapenos, chopped
2 tbsp of water to thin the burrito filling
1 pkg flour or corn tortillas
salt and pepper to taste

Brown the meat on medium high heat in a dutch oven or large stock pot. 6 mins. Add onion, garlic, and all the seasoning. Cook until onion is soft. About 7 mins. Stir in the refried beans and chopped jalapenos. Add the water and bring to a simmer. Scrape the bottom of the pan to loosen up the flavor. Then reduce heat to medium low and let simmer for AT LEAST 10 mins. The flavors need to marry and the filling needs to thicken. Wrap the tortillas in aluminum foil and heat in a 200 degree oven for 5 mins. Add the filling to the tortilla, top with some shredded cheddar, and sour cream. Then wrap it like a god damn burrito should be wrapped.
