Episode 1: Time to Make the Chili

Ingredients

1 onion
1 green pepper
3 cloves garlic
1 28oz can of whole peeled tomatoes
3 spoonfuls of tomato paste
1 spoonful of sugar
1 cup of water
1 can of beans (black or kidney or both)
1 pound ground sirloin or turkey (chuck is too greasy)

Seasoning
2 tbsp chili powder
1 tbsp cumin
2 tsps cayenne
1 tsp oregano
1 tsp onion powder
1 tsp garlic powder
2 tsps paprika
2 tsps salt
2 tsps pepper

Brown the meat or medium high heat in a dutch over or large stock pot. 6 mins. Add onion, green pepper, garlic, and all the seasoning. Cook until the veggies are soft. About 7 mins. Crush up the whole peeled tomatoes in a bowl, add the tomato paste, sugar, and water. Add to the pot and bring to a boil. Now rinse off the beans and toss them into the chili. Bring to a boil again. Then reduce heat to medium low and let simmer for AT LEAST 30 mins. The flavors need to marry and the chili needs to thicken. Top with some shredded cheddar and serve with chips.
